Abstract
Dynamic shear modulus of casein gel was measured slightly above the gelation concentration as functions of frequency and concentration. The results show that the shear modulus G is expressed by G=C. Et where E is the reduced concentration in reference to the gelation concentration. The exponent t is found to be constant at lower frequency region and is close to the value expected from the percolation theory.
