N5-(carboxyethyl)ornithine synthase in Lactococcus lactis IO-1 producing a novel lantibiotic nisin Z

Abstract

N5-(carboxyethyl)ornithine synthase was successfully determined from the cell extract of Lactococcus lactis IO-1, which that produces an antimicrobial peptide, nisin Z. There might be the coexistence of this enzyme and nisin Z formation at molecular level since no detection of N5-(carboxyethyl)ornithine synthase in non-nisin producing strains.
